Cilantro Lime chicken fajita kabobs

My freezer meal group is doing a “grill edition” this month and I had been wanting to try out a new chicken marinade that I thought would pair well with kabobs. This marinade turned out AMAZING and so full of flavor. I absolutely LOVE cilantro, so I used a ton of it in this. I marinated it for about six hours and shook it up a couple times so each piece would be full of flavor while it sat in my fridge. Oh yum! I want to go eat up the leftovers right now!

Ingredients

1.5 pounds of boneless skinless chicken breasts, chopped into 1 1/2 in cubes
1 c coarsely chopped cilantro, stems removed
1/3 c lime juice
1/3 c olive oil
2 T minced garlic
1 T brown sugar
2 t kosher salt
1 1/2 t cumin
1/2 t red pepper flakes
any veggies you want for kabobs, including bell peppers, onions, mushrooms, cherry tomatoes, zucchini and more

Mix up all marinade ingredients and pour over chicken. Put a lid on your container or seal your bag and shake thoroughly. Marinate up to 24 hours. When ready to assemble, alternate pieces of chicken with veggies however you wish. Grill and enjoy!
