So with how Easter and a conference at church fell on the calendar, we went six LONG weeks between freezer meal sessions! Ah! I had to cook so much more than normal and even made about four meals to tide me over at one point for my freezer. Needless to say, we were all thrilled when freezer meal assembly rolled around once again!
There were 9 of us assembling 12 sets of meals this month. Aside from 10, which is obviously a nice round number, 12 is pretty good too. A lot of things come in a dozen at Sams, as far as canned goods go. And thanks to the lovely Melissa, this was the first month I did NOT do the Sams pickup! Thank you, thank you Melissa!
Right, Melissa and Shannon assemble what looks like stuffed pepper soup. These 10lb mega rolls of meat look disgusting to me but they’re actually a 90/10 ground beef that tastes really good. Its just the, er, tube that grosses me out a bit.
Derek and Lacey were on meatballs this month. They pretty much dominated them and were very efficient!

I thought we hit a record low this month but Melissa informed me we had one month less… this month’s total was $70 per person! Woot! I was VERY happy with this as I try to keep it around $80. We increased the price of the meals we sell to $140 this month, and that definitely helped a little. Plus we just did lists well and used up a lot of inventory. It was a very successful month!
