I have a favorite salad. It’s totally my go-to and I almost always have all the ingredients in the house. What REALLY makes it the best though is this homemade avocado/cilantro/lime dressing. I actually was going to just make the salad this week and use another bottled salad dressing because I only planned to grocery shop at Aldi this week and they never carry fresh cilantro. Well GUESS WHAT was in their produce section when I shopped this week!?! FRESH CILANTRO!
This is kind of a southwest salad, I guess you could call it. Chopped romaine, chopped tomatoes, diced bell peppers, some frozen corn (thawed) and black beans. You can add or remove other ingredients as you wish, and if you’re not making the dressing, diced avocado works great. So does grilled chicken. It’s amazing.
But the dressing. Oh the dressing.
1 c loosely packed cilantro, stems removed
The juice of 1 lime
1/4 c (or more) of olive oil
Dash of salt
Mix in food processor until creamy and smooth. Done!
The dressing is THICK so you either spread it over your salad or, if you’re packing a salad in a handy-dandy salad container like my hubby takes to work, you can give it a good shake to mix it all up. Enjoy!
