Low Carb Turkey Vegetable Soup

With fall, comes perfect soup and chili weather! Of course we’re eating tons of freezer meals but I was itching to just have a giant pot of soup simmering on my stove earlier this week. Inspired by this recipe from my mom, and tailored a bit to what we’re eating these days, I came up with this concoction. And it was a huge hit with all four of us!

Low Carb Turkey Veggie Soup

2 T olive oil

2 chopped onions

A bunch of celery, thinly sliced in food processor

6 c homemade (or store bought) chicken broth

1 lb ground turkey, browned

1 can diced tomatoes with juice

1 small can of tomato paste

2 large zucchini, diced

2 c frozen (or fresh) carrots

2 c frozen corn

2 c frozen green beans

2 t basil

2 t oregano

1 t garlic powder

1 t salt

Brown the turkey. While turkey is cooking, saute the onions and celery in the oil in a large soup pot. Then add the broth and the rest of the veggies and seasonings. When turkey is done, add to pot and bring to a boil. Then reduce to low and simmer as long as you want! Yum!
