Freezer Cooking – October Edition

Freezer cooking success, yet again this month! Shout out to the amazing women who come ready to rock and roll and assemble these meals at lightning fast speed 🙂 There were eight of us this month, which meant a LOT of pounds of meat… 15 pounds of ground turkey, 8 pounds of beef stew meat, 20 pounds chicken thighs, and about 40 pounds of chicken breasts. Plus 16 pounds of ground beef Erica picked up! Phew!
A change this month was that we met at the church for the first time! It worked out fabulously! Aside from lugging all of the aforementioned meat to the church, that is 🙂 It was so nice to have more room and large table to work at even more efficiently (and without the danger of my carpet incurring a random spill!)Below: several of us organizing before we get started. Photo credits to Emily! We got going shortly after this and it was about 90 minutes of meal assembly, if not a little less. With set up and clean up it took a bit longer, but WOW did we put those meals together quickly!

Our grand total was $73 per person for 9 meals this month. We just did 9 since we had some heartier ones on the docket. I cannot WAIT to try some of these!

  2. *Black Bean Chicken – 6 boneless skinless chicken breasts, 1 can black beans drained, 1 c frozen corn, 1 can diced tomatoes with green chiles, 1 block cream cheese, 1 taco packet
  3. *Meatballs with Veggies
  4. No potato beef stew
  5. Crockpot chicken and dumplings
  6. Honey sesame chicken
  7. Slow cooker chicken tortilla soup
  8. Turkey white bean pumpkin chili
  9. Clean eating cheeseburger soup
