September Freezer Meals

Another month, time for more freezer meals. My freezer got BARE this month, as we ate every single meal we had prepared with a whole week to spare before we prepped again šŸ˜¦ I need to do a better job spacing them out this month I think.

Here’s a pic of the cutest Illini fans in C-U to start… these babies did a fantastic job “doing their part” to go with the flow during our freezer meal session this month šŸ™‚

Emily and Carrie doing the meatballs. This meal has turned into the least favorite to assemble, I think… it’s definitely the messiest and most time-consuming!

We had several ingredients left over from last month, and picked some pretty budget-friendly meals this month, bringing our grand total to just $77 dollars! (and some change) 10 meals, $77. WOW. We still used six chicken breasts per meal, so they were the same size as last month. We think the six chicken breasts are about 2 pounds worth.
We have a group on Facebook now that you can join if you’re interested in participating from time to time. Looking forward to next month, when we’ll be trying some new chilis and soups I think!

  1. *Taco Chili- 1 lb browned ground beef 1 taco packet, 1 c frozen corn, 2 cans diced tomatoes, 1 can diced tomatoes with green chiles, 1 can chili beans in sauce, 1 can pinto beans rinsed and drained
  2. *Black Bean Chicken – 6 boneless skinless chicken breasts, 1 can black beans drained, 1 c frozen corn, 1 can diced tomatoes with green chiles, 1 block cream cheese, 1 taco packet
  3. *Coconut Lime Chicken
  4. *Meatballs with VeggiesĀ (2 trays)
  5. White Chicken Chili
  6. Creamy Italian Chicken
  7. Philly Cheese Chicken
  8. Salsa Verde Chicken
  9. Breakfast Casserole- 1 dozen eggs, 1 pound breakfast sausage, 1 package frozen hash browns, thawed, 2 c cheddar cheese and 1/2 cup diced green peppers
